Here at Elliston we believe that our wines get better with age. That's why we cellar and bottle age our wines for longer than most California wineries.

 

Our reds are cellared for a minimum of two years, They are aged in the bottles for at least one year before being released. 

 

The white wines are cellared for a minimum of one year. They are then bottled aged for another year or longer before being released.

PhilosophyWhen visiting our tasting room, it isn't uncommon to taste wines that are four to ten years old. It is quite a treat to have wines that have been given time to fully develop.

 

Elliston wines are meant to be open and enjoyed right away so come "Taste the History".
